Grilled Chicken Burgers with Spicy Peanut Sauce

Ingredients for the chicken

  • Grilled Chicken Thighs
  • 4 Tbsp coconut milk
  • 2 tsp minced, fresh ginger
  • 1 tsp finely chopped, garlic
  • 1 tsp soy sauce
  • 1 tsp caster sugar
  • 1/2 tsp turmeric
  • 4 large, skinless, boneless chicken thighs
  • 2 Tbsp olive oil for frying

Ingredients for the peanut sauce

  • 1 Tbsp soy sauce
  • 1 Tbsp sambal oelek
  • 1 tsp lime juice
  • 2 tsp minced, fresh ginger
  • 1 tsp caster sugar
  • 1/2 cup Pic’s Smooth Peanut Butter

Ingredients to serve

  • 4 tablespoons butter, softened
  • 1 clove garlic, minced
  • 4 brioche burger buns, cut in half
  • 4 Tbsp good quality mayonnaise
  • 4 large cos lettuce leaves
  • 2 baby cucumbers, thinly sliced
  • 1/4 red onion, thinly sliced
  • 3 Tbsp fresh mint leaves
  • 3 Tbsp fresh coriander leaves
  • 1 lime, cut into wedges

Directions

  1. In a large bowl, whisk together all chicken marinade ingredients. Add the chicken thighs, cover and chill for 4 hours.
  2. Whisk together soy sauce, sambal oelek, lime juice, ginger, caster sugar and 50ml warm water. Once the caster sugar has dissolved, whisk in the Pic’s Smooth Peanut Butter and set aside.
  3. Bring the barbecue grill to medium to high heat. Drizzle grill with olive oil and grill chicken thighs for 4 minutes on each side or until cooked through. Cook with the barbecue lid down. Regularly based with marinade. Remove from heat and set aside to rest for 5 minutes.
  4. In a small bowl, mix together softened butter and minced garlic. Smear garlic butter onto cut side of burger buns then toast on the grill until golden.
  5. Top grilled burger buns with mayonnaise, salad ingredients, chicken and a generous spoonful of peanut sauce. Serve with lime wedges.
