Big Mix Crusted Wedges

  • 1 large or 2 medium kumara (950g)
  • ½ cup Pic’s Big Mix
  • ¼ cup olive oil
  • 1 tsp salt
  • ½ Tbsp finely chopped fresh rosemary
  • 1 tsp finely chopped fresh sage
  • ½ tsp finely chopped fresh thyme


1. Preheat oven to 200°C.
2. Slice kumara in quarters lengthwise, then cut into roughly 3cm wedges. Transfer to a large bowl.
3. In a small bowl, whisk together remaining ingredients. Pour over the kumara wedges and toss to fully coat.
4. Arrange on 2 baking trays (ensuring not to overcrowd) and bake for 25-30 minutes, until nicely browned and cooked through.
