Pic's French Toasties

Ingredients

  • 2 large eggs⁠
  • 75ml milk⁠
  • 1 Tbsp cinnamon⁠
  • 4 thick slices of brioche⁠
  • 4 Tbsp Pic’s Smooth Peanut Butter⁠
  • ½ cup frozen raspberries⁠

Directions

1. Whisk the eggs, milk and cinnamon together in a large, shallow bowl. Spread 2 slices of the brioche with your Pic’s. Top with a layer of frozen berries. Sandwich another slice of brioche on top to make two sandwiches.⁠

2. Dip each sandwich into the egg mixture making sure to coat each side. Melt 1 Tbsp of butter in a large, heavy bottomed frying pan over a medium heat and fry each sandwich for around 2 minute per side, until golden brown and crispy. Transfer to a plate and cover with foil to keep warm while you make the remaining sandwiches.⁠

3. Cut each sandwich in half and serve with a dusting of icing sugar, maple syrup and mixed berries.⁠
