Bonjour Peanut Butterer

Peanut butter whipped cream Cookie

Ingredients

  • 1/3 cup cocoa
  • 1/2 teaspoon of baking soda 
  • 1/2 teaspoon salt
  • 1 1/14 cups of whole wheat flour 
  • 1/2 cup vegan butter
  • 1 cup sugar
  • 1 teaspoon vanilla extract 
  • 1 flax egg (1 tbs ground flax and 2 tbs warm water - let sit for 10 mins) 

Frosting

  • 1 cup Pic's Creamy Peanut Butter
  • 1/2 cup vegan butter 
  • 2 cups powdered sugar 
  • 1/2 teaspoon vanilla extract 
  • 3 tbs nut milk (I used coconut milk)

NOTE: USA measurements

Directions

  1. Preheat oven to 350-degree F. 
  2. Mix cocoa, baking soda, salt and flour in a big bowl.
  3. In a separate bowl, with an electric mixer, cream the butter and sugar.
  4. Add flax egg and vanilla.
  5. Add dry ingredients.
  6. Form into 2-inch balls and flatten slightly.
  7. Bake for 9-11 mins. 
  8. Whisk together all frosting ingredients with an electric mixer.
  9. Put into a piping bag.
  10. Once the cookies have cooled, pipe frosting onto one cookie and place another cookie on top to form a sandwich.
