Peanut Butter Stuffed Cookies


  • 12 Tbsp Pic's Crunchy Peanut Butter
  • 250g unsalted butter softened
  • 215g brown sugar
  • 100g white granulated sugar
  • 2 large eggs
  • 360g white flour
  • 35g cocoa powder
  • 1 tsp baking soda
  • ½ tsp baking powder


1. Preheat the oven to 175C fan assisted, and place 12 dollops of peanut butter on a cookie sheet lined with parchment paper. Refrigerate.

2. In a large mixing bowl, cream together the butter and sugars until the mixture is smooth.

3. Add in the eggs and whisk the mixture until the eggs are fully incorporated into the cookie dough.

4. Whisk in the baking soda, baking powder, flour, and cocoa powder until no clumps of dry ingredients remain in the cookie dough.

5. Surround each dollop of peanut butter in cookie dough and bake for 16 minutes.

6. Allow the cookies to cool slightly before removing them from the cookie sheet, serve and enjoy!
