In a small bowl, mix together everything for the chilli chicken patties until well combined. Form into 4 patties and refrigerate for at least 30 minutes to firm up.

When ready to cook, heat a drizzle of oil in a large frying pan over medium-high heat. Add the patties, in batches if needed, and cook for 5 minutes each side, or until browned on both sides. Remove and keep warm. If desired, place the burger bun halves, cut-side down, into the pan to heat.

To make the spicy peanut sauce, whisk everything together until combined and creamy. Add more water if needed.

To assemble, split each burger bun and spread each bottom bun with spicy peanut sauce. Top each with some slaw, followed by a patty, cucumber slices and a generous dollop of more spicy peanut sauce. Add the top bun on top of each burger, and enjoy!

- Peanut oil or olive oil, for frying
- 4 brioche burger buns, buttered
- 1 cup fresh slaw
- ½ cucumber, thinly sliced
Chilli Chicken Patties Ingredients
- 400g chicken mince
- ½ cup panko breadcrumbs
- 1 tbsp peanut butter
- 2 medium spring onions, finely sliced
- 1 garlic clove, grated
- 2 tsp soy sauce
- 2 tsp gochujang
- 1 tsp grated fresh ginger (or 1/2 tsp ground)
- ½ tsp salt
Spicy Peanut Sauce Ingredients
- ¼ cup Pic’s Chilli Peanut Butter
- 2 tbsp gochujang
- 2 tbsp mayonnaise
- 2 tsp soy sauce
- Juice of 1 lime
- 2-3 tsp water
