Ingredients
- 1/3 cup cocoa
- 1/2 teaspoon of baking soda
- 1/2 teaspoon salt
- 1 1/14 cups of whole wheat flour
- 1/2 cup vegan butter
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 flax egg (1 tbs ground flax and 2 tbs warm water - let sit for 10 mins)
Frosting
- 1 cup Pic's Creamy Peanut Butter
- 1/2 cup vegan butter
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- 3 tbs nut milk (I used coconut milk)

Directions
- Preheat oven to 350-degree F.
- Mix cocoa, baking soda, salt and flour in a big bowl.
- In a separate bowl, with an electric mixer, cream the butter and sugar.
- Add flax egg and vanilla.
- Add dry ingredients.
- Form into 2-inch balls and flatten slightly.
- Bake for 9-11 mins.
- Whisk together all frosting ingredients with an electric mixer.
- Put into a piping bag.
- Once the cookies have cooled, pipe frosting onto one cookie and place another cookie on top to form a sandwich.
