1. Preheat oven to 170 degrees C.
  2. Combine apples, coconut sugar, lemon juice, cinnamon and vanilla in a large mixing bowl.
  3. Transfer to oven-proof dishes and bake for approx. 10 minutes.
  4. Meanwhile, combine all crumble ingredients in a mixing bowl, mix well.
  5. Spoon the crumble mixture over the apples and return to the oven for approx. 30 minutes or until the crumble is golden and apples are well cooked.
  6. Allow to cool slightly, serve and enjoy. We recommend serving with a dollop of coconut yoghurt.
