Honey Peanut Butter Rice Bubble Slice

Ingredients

  • 150g Pic’s Honey Peanut Butter
  • ¼ cup melted coconut oil
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 3 cups rice bubbles
  • 100g white chocolate, for topping
  • 1 tbsp chopped roasted peanuts, for topping
  1. Line a medium-size slice tin, baking dish or container with baking paper.

  2. Heat the Pic’s Honey Peanut Butter, coconut oil and honey together in a saucepan or in the microwave, only until melted. Add the vanilla and salt, and stir well until the mixture is smooth.

  3. Add the rice bubbles and fold until well combined. Add more rice bubbles if the mixture is too wet.

  4. Firmly press into your prepared tin, using the back of a spoon. Gently melt the white chocolate over a double-boiler or in the microwave, and drizzle over the slice. Sprinkle with chopped peanuts.

  5. Refrigerate for at least 4 hours or overnight. Slice into bars or squares, and store leftovers in the fridge.
