Halloumi Bites with Honey Peanut Sauce

Ingredients

  • 2x200g blocks halloumi, each cut into 6 fingers
  • 1/4 cup Pic’s Honey Peanut Butter
  • 2 tbsp honey
  • 1 tbsp rice wine vinegar
  • 1/2 tsp grated fresh ginger
  • 1 tbsp finely chopped peanuts, to garnish
  • Fresh thyme leaves to garnish

Directions

  1. Put the halloumi in a heatproof dish or bowl and cover with hot water. Leave to soak for at least 10 minutes. Drain and pat dry thoroughly.

  2. Heat 2 tbsp olive oil in a non-stick frying pan over medium-high heat, Cook the halloumi for 2-3 minutes each side, turning as needed, until nicely browned all over.

  3. To make the Honey Peanut Sauce, whisk together the Pic’s Honey Peanut Butter, honey, rice wine vinegar and ginger until smooth. Gradually add 2-4 tbsp warm water until your desired consistency is reached.

  4. Arrange the fried halloumi on a serving plate, with the peanut sauce on the side.
