Galaxy Glazed Donuts

Prep Time: 30 minutes, Cooking Time: 15 minutes, Serves: 8 Astro-nuts

Ingredients

  • 200g plain flour
  • 100g caster sugar
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 ripe banana, mashed
  • 60ml vegetable oil
  • 180ml soy milk* (+ 1 tbsp apple cider vinegar)
  • 70g Pic's Smooth Peanut Butter

To decorate

  • 360g powdered sugar
  • 60ml water
  • Red food gel
  • Blue food gel

Enjoy these whilst listening to the Star Wars soundtrack, obviously. 

Directions

  1. Preheat the oven to 180c° and lightly grease your donut pan(s).
  2. Place all of the ingredients into a food processor, and blitz a couple of times until smooth (be careful not to blitz for longer than needed).
  3. Pipe the batter into the prepared donut pan.
  4. Bake in the oven for 12-15 minutes, until lightly golden. Then remove from the oven and allow to cool for at least 10 minutes before transferring over to a cooling rack.
  5. Once the doughnuts have cooled completely, make the galaxy icing.
  6. To make the galaxy icing, add the icing sugar and water into a bowl and whisk together well (or use a food processor to make it easier). Once you have a thick icing, add a squeeze of red food gel to one half of the icing and a squeeze of blue food gel to the other half. Using a cocktail stick (or something similar), gently stir together the gels, until you have a ‘galaxy’ effect.
  7. Working quickly, dip the donuts into the icing and place onto a tray/wire rack. Dust over some edible glitter and serve. 
  8. Store in an airtight container for up to 3 days.
