1. Heat oil in a pan on medium heat and then add in onion and cook for 2mins. Then add in garlic and capsicum and cook for another 2mins. Then add in the chicken breast and cook, stirring occasionally for another 5mins or until it begins to brown.
  2. Add in the peanut butter, soy sauce, sriracha, curry powder and water. Bring to the boil and then reduce to a simmer for 10mins until it begins to thicken.
  3. Meanwhile steam the broccoli florets for 2mins in the microwave and cook the rice as per packet instructions.
  4. Serve chicken satay on white rice and broccoli.
