1. To make the jam, put all the ingredients in a small saucepan and cook over medium heat, mixing gently until the mixture thickens slightly. Cool, then store in the fridge.
2. To make the chia puddings, whisk together the chia seeds, milk, honey and vanilla essence until well combined. Let it sit for 5 minutes, then give it another stir to avoid the chia seeds clumping.
3. Divide the jam between the jars, then pour over the chia seed pudding mixture.
4. Cover and refrigrate overnight or until set.
5. To serve, squeeze the peanut butter over the top of the pudding and top with fresh berries and roasted peanuts.
