Waffles with Boysenberry Jelly

  • 1 cup of brown rice flour or buckwheat flour
  • ½ tsp baking powder
  • 2 tbsp. maple syrup
  • 1 tsp. vanilla bean paste
  • 1 cup of milk (plant or dairy)
  • 2 eggs, separated
  • 1 tbsp. butter, melted (or coconut oil)

To Serve

  • 1 banana, sliced
  • 60gm dark chocolate, melted and thinned with 1 tbsp. cream or coconut oil
  • 6 tbsp. boysenberry jam mixed with ¼ cup water
  • freeze dried berries and crushed pistachios to garnish


  1. To make the waffle batter, place the flour, baking soda, salt and vanilla into a medium size bowl and stir to combine.
  2. In a large jar, add the egg yolks, milk, maple syrup and butter and shake well to combine.
  3. Make a well in the flour and pour the yolk and milk mixture in and stir to combine.
  4. In a separate bowl using an electric beater, beat the egg whites until stiff.
  5. Carefully fold through the flour batter, trying not to collapse the egg white.
  6. Heat your waffle iron or maker and divide the mixture between each pan. Careful not over fill as it will spill out the sides.
  7. Cook the waffles until golden.
  8. To assemble, slice the waffles in a diagonal and stack on top of each other.
  9. Place the banana around the waffles, drizzle with the boysenberry jelly sauce followed by the chocolate sauce and garnish with freeze dried berries and pistachios.

Serve immediately.
