1. Heat the oven to 375 F.
  2. Line 2 baking sheets with kitchen parchment or coat them with cooking spray.
  3. In a medium bowl, stir together the peanut butter, brown sugar and egg.
  4. Mix just until you have a thick paste.
  5. Gently stir in the peanuts and chocolate chips.
  6. Scoop by the tablespoon onto the prepared baking sheets, leaving 1 1/2 inches between them.
  7. Bake for 10 minutes, or just until set.
  8. Allow to cool for 10 minutes before removing from the tray.
  9. Once cooled, store in an airtight container at room temperature for up to a week.
