1. Prepare an oven tray with non-stick paper.
  2. Mix baking soda, 1 Tsp. water and the vanilla paste; reserve.
  3. Mix sugar, 1 cup water and the corn syrup in a heavy based saucepan. Cook over medium heat, until it forms a light golden caramel.
  4. Stir in the butter & peanuts, cook until golden brown. (Watch carefully so mixture does not burn.)
  5. Immediately remove from heat. Quickly stir in baking soda mixture until light and foamy.
  6. Pour the caramel onto the non-stick paper lined trays; quickly spread about ½ cm thick. Cool completely, at least 1 hours.
  7. Break into small pieces. Store in an airtight container for up to one week.
