Method for the chocolate chia pudding:

In a bowl, mash the banana. Once mashed, add the remaining ingredients and mix in until smooth. Put this in the fridge to soak overnight.

Method for the caramel peanut butter pudding:

In a food processor, process the dates until they make a paste. Then, add the other ingredients and continue to process until the mixture is well combined. Place this in another bowl and pop it in the fridge next to the chocolate pudding overnight.

The next day..

To dish up the pudding, layer it like a lasagne; chocolate pudding, caramel pudding, crunchy toppings and repeat.
This recipe makes enough for 3 people… and plenty of bowl licking goodness.

Cool idea: Mix it up with your toppings! Add sliced bananas, dried fruits, more nut/seed varieties. Yum!
