1. Preheat oven to 160 degrees C. 
  2. Combine all dry ingredients in a large mixing bowl, mix well. Then add all wet ingredients (except egg whites) and mix well. 
  3. Whisk egg whites until firm peaks form and then gently fold into the mixture.
  4. Pour into a greased and lined cake tin (20cm diameter) and arrange the cherries on top.
  5. Bake for approx. 1 hour 10 mins or until cooked through (check with a skewer)
  6. Allow to cool and then remove from tin. 

Serve and enjoy.
