- Preheat oven to 160 degrees C.
- Combine all dry ingredients in a large mixing bowl, mix well. Then add all wet ingredients (except egg whites) and mix well.
- Whisk egg whites until firm peaks form and then gently fold into the mixture.
- Pour into a greased and lined cake tin (20cm diameter) and arrange the cherries on top.
- Bake for approx. 1 hour 10 mins or until cooked through (check with a skewer)
- Allow to cool and then remove from tin.
